Ingredients
Pico de Gallo
- 2 plum tomatoes, diced
- 1/2 jalapeno, diced, seeded if desired
- 1/2 small red onion, diced
- 1/2 cup fresh cilantro leaves, roughly chopped, reserving some for garnish
- Juice of 1/2 lime
- Salt and freshly ground black pepper
- 2 teaspoons vegetable oil
- 8 ounces fresh Mexican-style chorizo, casings removed
- 1 cup frozen hash browns with peppers and onions, such as Potatoes O'Brien
- 8 large eggs
- Salt and freshly ground black pepper
- Hot sauce
- 4 large burrito-size tortillas
- 1 avocado, sliced
- 1/2 cup finely shredded Cheddar or Mexican blend cheese
Pico de Gallo
- Combine tomatoes, jalapenos, onions, cilantro and lime juice in small bowl. Season with salt and pepper and set aside.
- Heat the oil in large non-stick skillet over medium heat.
- Add chorizo and cook, breaking it up, until slightly crisp.
- Remove to a paper towel lined plate.
- Add the hash browns to the skillet and cook for 8-10 minutes stirring occasionally.
- Beat the eggs in a medium bowl until frothy. Sprinkle with salt and pepper and a couple dashes of hot sauce.
- Pour the eggs over the hash browns and cook until eggs are fluffy, about 3 minutes.
- Remove from the skillet and keep warm.
- Warm the tortillas in the skillet one at a time.
- Build the burrito by layering the avocado, egg mixture, a Tbsp of pico de gallo, and sprinkle with cheese.
- Fold in the two sides and roll up tightly.

Ingredients
- 1/4 cup of all purpose flour
- 1 cup of milk
- 1 pinch of salt
- 3 eggs
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 Tbsp white sugar
- 12 thick slices of bread
- Measure flour into a large mixing bowl.
- Slowly whisk in milk, eggs, salt, cinnamon, vanilla extract and sugar until smooth.
- Heat a lightly oiled pan over medium heat.
- Soak bread slices in mixture until saturated.
- Cook bread on each until golden brown.

- 2 cups flour
- 3 eggs
- 1 Tbsp oil
- 2 cups milk
- Pinch of salt
- 8 oz. cream cheese, softened
- 1 cup powdered sugar
- 4 Tbsp butter, softened
- 2 tsp vanilla
- Strawberries, raspberries, blueberries
Directions
Crepes
- Combine all ingredients into blender and mix until well combined
- Heat a pan and pour in the batter 1/4 at a time
- Twirl the pan to evenly spread the batter
- Cook until lightly browned on the bottom and then flip

- Combine all ingredients and mix until smooth.
