As if dessert weren't already delicious enough, some brilliant soul decided to add alcohol to it, and the rum cake was born.

- 1 1/2 cups pecan pieces, reserve 1/4 cup
- 4 whole eggs
- 1/2 cup water
- 1/2 cup canola oil
- 1/2 cup gold rum, Bacardi
- 18.25 oz. box classic yellow cake mix
- 1 oz. small box sugar-free instant vanilla pudding mix
- 1 cup granulated sugar
- 1/4 cup water
- 1 stick butter
- 1/2 cup gold rum (recommended: Bacardi)
For Cake
- Grease a Bundt pan.
- Beat eggs, oil, water and rum in a mixer.
- Add pudding mix and cake mix and beat on medium for 3-5 minutes.
- Pour into the pan and bake at 350 degrees F for 40-45 minutes.
- Begin preparing 10 minutes before cake is done baking.
- Melt butter in saucepan and add the sugar and water, bring to boil.
- Once it starts to boil take off the heat and add the rum.
- Once cake is done baking, take out of the oven and leave in the pan.
- Gently prick holes into the cake with a skewer.
- Slowly pour half the glaze over the cake.
- Once the cake has soaked up the glaze, turn it over and empty the cake from the pan.
- Gently prick more holes into the other side and add the second half of the glaze over it.
- Allow to cool, and enjoy!

MINI FROZEN KEY LIME PIE

Serves: makes 18 portions
Ingredients
- 3/4 cup key lime juice, fresh squeezed
- 1 can sweetened condensed milk
- 8 oz. whipped topping
- 8 oz. cream cheese, softened
- 1/2 stick of unsalted butter, melted
- 1 sleeve honey graham crackers,crumbled
- Silicone cupcake liners
- Crush graham crackers and mix with the butter, then set aside.
- Cream the cream cheese with a hand mixer until smooth.
- Add in the sweetened condensed milk and key lime juice to the cream cheese and mix until smooth.
- Add whipped topping to the cream cheese mixture.
- With the silicone cups, fill each 3/4 full with the mixture and then top it with the graham cracker crumbs.
- Freeze for 4 hours, and then enjoy!
