Any meal involving cream cheese is just a shoe-in for being A-M-A-Z-I-N-G. Why even try to kid ourselves?
Don't worry though, there's still a decent dose of healthy inside these stuffed morsels of goodness.

Spinach & Cream Cheese Filling
- 4 oz. cream cheese
- 1/2 cup packed baby spinach
- 2 scallions, thinly sliced
- 3 cloves fresh garlic, minced
- 1/2 jalapeno, minced (optional)
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
Stuffed Chicken Breasts
- 4 boneless skinless chicken breasts
- 4 slices of swiss cheese
- 2 eggs, lightly beaten
- 1 1/2 cups Panko bread crumbs
- 1/2 cup freshly grated parmesan cheese
- 1/2 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
Spinach & Cream Cheese Filling
- In a medium bowl, combine all ingredients.
- Place a rack near the center of the oven and preheat to 350 degrees F. Place a piece of parchment paper on a baking sheet and set aside.
- Butterfly the chicken breasts and using a meat mallet, flatten each breast to about 1/2 inch.
- Spread a quarter of the mixture onto each chicken breast, top with swiss cheese and carefully roll up chicken. Secure with a toothpick.
- Place the beaten eggs in a shallow dish. In another shallow dish, combine Panko crumbs, parmesan cheese, Italian seasoning, salt and pepper. Dip each chicken breast into the eggs then into the Panko mixture.
- Place the chicken on the prepared baking sheet and bake for 40-45 minutes. Serve warm.

GRILLED TEQUILA LIME SHRIMP TACOS

- 16 large shrimp
- 1/4 cup tequila
- Juice from 2 limes
- 1 garlic clove, smashed then minced
- 3 Tbsp cilantro, chopped
- Dash of cayenne pepper
- Dash of salt
- 2 tomatoes
- 1/4 white onion
- 1 tsp chopped jalapeno
- 2 Tbps chopped cilantro
- Squeeze of fresh lime
- Dash of salt
- 1/2 cup of mayo
- 2 tsps chipotle peppers canned in adobo sauce
- 1 tsp lime zest
- 1 tsp fresh lime
- Dash of salt & pepper
- 4 corn tortillas
- 1 cup shredded red cabbage
- In a small bowl, combine the tequila, lime juice, garlic, cilantro, cayenne pepper and salt. Add shrimp and cover bowl. Put in fridge to marinade for 30 minutes.
- In another bowl, mix all ingredients for pico de gallo.
- Mix all ingredients for chipotle mayo in separate bowl and set aside.
- Heat grill to medium and skewer shrimp.
- Assemble the tortillas and divide the cabbage between them. Top with shrimp, pico de gallo and chipotle mayo.
